Yes, you can eat ornamental cabbage & kale, however, it is a little more "bitter" than its edible cultivar cousins (broccoli, cabbage, cauliflower). When it's cooked it will turn to a unappetizing gray color. Through the years of propagating an ornamental, colorfully leaved variety, most of the palatable flavor has been lost.
